Sector S3 — Gelato & Production Labs

Gelato shop and food production laboratory fit-out

Production and retail under one roof. We built Badiani’s first gelato laboratory in Spain, making 3 tons of gelato a week behind a glass partition, and have delivered Badiani sites across London and Spain.

FAQ

Frequently asked questions

Q1

What does a gelato laboratory need?

A gelato laboratory needs a process layout from intake to dispatch, industrial refrigeration and chillers, adequate power and water, drainage and the right licence for production. Badiani’s Eixample laboratory in Barcelona added heat recovery and water treatment to support 3 tons of production a week.

Q2

Can production and retail share one site?

Yes, where the local code allows it. In Barcelona we secured a single activity licence covering both B2B wholesale production and B2C retail for Badiani, applied for simultaneously, with a glass partition that lets customers watch production from the shop.

Q3

Do you maintain production equipment after handover?

Yes. Our Asset Maintenance service provides Preventive Planned Maintenance for commercial refrigeration, heating, HVAC and extraction. Production sites run their equipment hard, so intervals are set per asset rather than on a single calendar. Badiani’s Eixample laboratory, for example, runs an industrial water chiller and heat recovery systems to produce 3 tons of gelato a week.

Q4

Do you work with food brands expanding internationally?

Yes. Badiani, the Florentine gelato brand, is a recurring client across London and Spain. We deliver across the UK, Spain, France and Italy, handling each country’s planning and licensing code alongside the build. Our work for Badiani includes Mercato Mayfair, Angel and Covent Garden in London, Mandri, and its first gelato laboratory in Spain, in Barcelona’s Eixample.
